Tropical-ish Kale Smoothie

Let me just preface this post by saying: Not everyone has a green smoothie ‘thumb’. Unless you are the Miyagi of blending the perfect combination, then they can be somewhat unpalatable. Even while creating this wonderful Tropical-ish Kale Smoothie, I still managed to think of additions or alterations after all was said and done. I’ll note them at the end. But first, a story…

After inhaling a snack pack size of Oreos yesterday (check out my twitter feast post) – provided by a friend after rescuing us when our truck broke down – I felt like I needed some redemption.

Okay it’s not really called the “horrendous” circuit workout, it’s the “no-nonsense circuit workout,” but I’m thinking about starting a petition to change the name after barely finishing one round of it. Did I mention I HATE circuit/strength training…it’s my Achilles heel. I better stick to yoga.

After somewhat finishing my 12:23:09 workout, I decided to keep the rhythm going and make a green smoothie.


Kale is an amazing green, with a powerhouse of nutrients. It’s high in vitamins K, A, and C, calcium, iron, is a good source of fiber, and also has the ability to lower your cancer risk tremendously. And that’s just scratching the surface of all the health benefits of kale. Please, tell me what slab of meat will do that? (hint: none)

I started by putting the flax seeds in my blender first and pulsing them until they were ground up completely. Then I added the frozen banana, kale, frozen mango, freshly squeezed orange, and water. On top, I grated the fresh ginger like so…

Then I blended until a smooth, velvety, scrumptulescent, frothy batch of goodness presented itself. If you want the taste to be dominated by a specific ingredient, by all means add more! Or, you could be like me and realize you want it even more velvety, so you add half of a small avocado…

After blending in the avocado I tricked myself again, and convinced my brain it was happy hour by pouring it into a large beer mug. Chris said it looked like I was getting a head start on St. Patrick’s day, but it definitely didn’t taste like green beer. Although it did have a frothy top.

Tropical-ish Kale Smoothie 

Makes 1 large serving, or 2 small

  • 3 stalks of fresh kale, rinsed well and trimmed from stalks
  • 1 T flax seeds, ground in blender first
  • 1 frozen banana*
  • 3/4 cup frozen mango*
  • 1 inch piece fresh ginger, peeled & grated
  • half an orange, freshly squeezed
  • half of a small avocado (optional)

Grind flax seeds in blender first. Add the rest of the ingredients and blend until very smooth.

*If you use fresh banana and mango, add a few ice cubes to make it cold.

Other add-ins/alterations:

  • Use spinach instead of kale if you want a milder tasting smoothie
  • replace flax with chia seeds
  • add pineapple**, or replace mango
  • use your favorite non-dairy milk instead of water
  • use 1/4 tsp ground ginger instead of fresh, if you don’t have it

**It’s pineapple season, right??
