Spicy “Kitchen Sink” Quinoa

I have been living off of quinoa for the past week.

Chris and I decided not to renew the lease in our current apartment complex, so we’ve been scrambling to find a place in the area we want (not here). Having to be out by the end of the month didn’t help my anxiety, which meant eating pretty much the same thing on a daily basis.  

Well guess what? We found a place!

I’ve mentioned before that we’re eager to move out of the city into a quieter, more country community, and that’s within commuting distance, and I think we’ve done just that. Although we’re not buying yet, we found a nice single family home to rent that’s twice as big, and $500 less expensive than what we’re in now. Also, since I’m only in my office three days a week, a 45 minute commute isn’t bad for me. 

 So, now that my anxiety has subdued, I thought I’d share a very simple yet filling recipe.

If there’s one thing I love about eating plant-based, it’s all the variety of dishes I can create with one ingredient. And generally, they won’t taste the same every time. 

Quinoa, is what happens when you make a trip to Whole Paycheck Foods because it’s the closest store to you, and come away with a three-pound bag of the stuff.

Plus two bars of dark chocolate.

And maybe a six-pack of beer.

With zero motivation to venture over to a store again, I had been forced to make do with what we had. I can’t say that all the meals were extravagant. But I managed to eat breakfast, lunch and dinner.

If you count dark chocolate and cupcakes as dinner.

Which I do.

When Chris is on shift, I don’t feel as much pressure to care about what I’m making. Case in point, last night. But then a glimmer of hope shot through my soul when, after opening the refrigerator, I saw our giant bottle of Frank’s Red Hot Sauce just waiting to be used. Over and over again.

Do they have Frank’s Red Hot Anonymous groups out there? Because I’m definitely a candidate.

I really do put that shit on everything.

Spicy “Kitchen Sink” Quinoa

You can literally put whatever you want into this mixture. Mushrooms, potato, peppers, celery, black beans, chick peas, etc. The recipe below is just what I had on hand that sounded good. 

Serves 2-4

  • 2 1/2 cups cooked quinoa
  • 1 small purple onion
  • 1 medium-sized carrot
  • 1 cup packed spinach
  • 1-2 T Frank’s Red Hot Sauce (or other hot sauce of your choice)
  • 1/4 tsp salt
  • 2 tsp olive or canola oil

Heat the oil in a cast iron or other deep saute pan over medium-low heat. Only for a couple of minutes. Don’t let your oil start to smoke. Chop red onion and carrot, transfer to the heated pan. Saute for 5-7 minutes, or until tender. Add in spinach. Saute for another 2 minutes, or until all the spinach is wilted. Turn the burner off and mix in the cooked quinoa. Add salt and desired hot sauce amount.

Stuff into a pita pocket, or eat from a bowl. Top with more hot sauce if you like it even spicier!
